White/Cinnamon Bread:

*Bread Flour 10.5 cups or 1225 g

*Oil 6 tablespoons or 80 g 

*Water 3 cups or 710 g 

*Salt 2 teaspoons 15 g

*Sugar 1.3 cup or 86 g 

*Gluten 1 ½ tablespoon or 15g 

*Yeast 1 ½ tablespoon or 18 g 

Use hot/warm water from tap. Add 2/3 of flour with the rest of the ingredients (using care to not directly mix salt and yeast together), then add the last 1/3 of flower and mix in Bosch for 6 minutes. After first rising, divide dough into 3 parts (about 710 g each) and roll out on counter. Sprinkle about ¼ cup of cinnamon/sugar mixture (at 1:4 ratio) then roll up into loaf. After second rising bread pan, cook at 350 degrees for 35 minutes. Make 3 loaves!

Wheat Bread:

*Wheat 8 cups or 900 g

*Bread Flour 2 cups or 225 g

*Oil 6 tablespoon or 80 g

*Water 3 cups or 712 g 

*Salt 2 teaspoons or 15 g 

*Honey 6 tablespoon or 130 g

*Gluten 2-3 tablespoon or 30 g

* Yeast 1 ½ tablespoon or 18 g 

Makes 3 loaves. Bake for 32-33 min. at 350 degrees. Combine approx. half of wheat flour with salt, oil, water, honey, and gluten. Mix briefly with dough hooks and mixer and add yeast. Be careful water is not too hot, and yeast and slat are not combined at the same time. Hot water and salt directly on yeast may kill it. Mi another 30 seconds then ass the rest of the water and bread flours. Continue mixing for another 6 minutes. Transfer to greased bowl and et rise until at least double in size. Knead dough a few times (knock back) then separate into 3 equally sized pieces and form into loaves. Place in bread pans. Allow to rise until round just above level of pan. Glass pans work best. Remove loaves from pan immediately after baking to cool. Rub butter on top to loaves while still hot.
